Aqua Shi's Chef Cooks Up Thai Curry and Shortbread

Tuesday's Great Day got stomach's growling, when the crew cooked up some Thai Curry and Shi Shortbread in the Great Day Kitchen.

Kopi and Liz were joined by Aqua Shi's Chef Mauricio Lopez Jr. who whipped up his signature recipes in minutes!

Here's the recipe for those who wish to cook it at home: 

 Thai Curry:

  • 4 Cans Heavy
  • Coconut Milk
  • 8 Shallots
  • 4 Stalks Lemongrass (bruised & chopped)
  • 1 Small piece Ginger Root (peeled & bruised)
  • 1/2 Cup Mae Ploy Red Curry Paste
  • 1/2 Cup Lime Juice

Method:

Sweat shallots, Lemongrass, and Ginger for 10 minutes.  Sauté vegetables and Curry Paste until it's caramelized.  Deglaze with Lime juice for a couple of minutes.  Add Coconut milk and reduce liquid until it thickens.  

Shi Shortbread:

  •  5 1/4 Cups of Flour (sifted)
  • 1/2 Cup Sugar Granulated
  • 2 Cups Heavy Cream
  • 2 Tablespoons Baking Powder
  • 2 Teaspoons Baking Powder
  • 1 Teaspoon Salt 1 1/4 Cups of butter (chilled)
  • Zest of 1 Orange Method: Preheat Oven to 350.

Wisk dry ingredients, add zest of cream, mix Butter and dry ingredients until flaky.  Add Cream and hand mix until firm.  Rollout in 2 1/2 inch rectangles.  Add cream and sugar to tops. Bake at 350 for 25 minutes.
