Kopi's Favorite Greek Garlic Sauce

When it comes to a great garlic sauce to use over fish and other food Kopi has his own personal favorite.

It's called "Greek Garlic Sauce" (of course), or Skordalia', which is meant to go well with fried fish, zucchini, or boiled potatoes and beets. The sauce can also be served as a dip with raw vegetables. 

 Kopi wants to share the great recipe with everyone; here it is for those who wish to try it at home:

 Greek Garlic Sauce

 Serves 6-8

  • 4 oz/115 g whole blanched almonds
  • 3 tbsp fresh white breadcrumbs
  • 2 large garlic cloves, crushed
  • 2 tsp lemon juice
  • salt and pepper
  • 2/3 cup of extra virgin ollive oil
  • 4 tbsp hot water

To Serve:

Pita Bread
Raw Vegetables, such as bell peppers, cucumbers and carrots

  1. Put the almonds in a food processor and process until finely ground. Add the breadcrumbs, garlic lemon juice, salt and pepper and mix well together.
  2. With the machine running, very slowly pour in the oil to form a smooth, thick mixture. When all the oil has been added, blend in the water.
  3. Turn the mixture into a serving bowl and chill in the fridge for at least 2 hours before serving with pita bread and raw vegetables.
