
Looking for a good recipe to try out this week? Look no further than "Great Day."
Chef Paul Urias was live on Great Day to cook Cordon Bleu.
Here's a look at the recipe for those of you who may wish to try it at home:
Cordon Bleu:
1. boneless, skinless chicken breast
2. sliced ham, 1 or 2 per breast
3. sliced cheese, Swiss or any cheese you like
4. 1 or 2 sleeves of salted crackers
5. 1 egg per chicken breast
6. 1 or 2 cups all purpose flour
7. salt, pepper, garlic
8. 2 or 3 cups vegetable oil
First, we crush the crackers for the breading.
Next, we mix eggs with spices.
Then, we butterfly or pound chicken breast to flatten it out, then lay ham and cheese on flat breast, then roll up.
Coat the chicken breast roll with flour, then dip in egg mix and last, cover with cracker crumbs.
Lightly brown one side of Cordon Bleu, then the other. Remove from oil and bake on cookie rack for 45 min. to allow excess oil to drain. It's done now, and ready to eat.
Chicken Casserole:
1. boiled chicken breast meat and about 2 chicken breasts, shredded
2. 1 pack wide egg noodles or any pasta you like
3. 1 cup chopped celery
4. 1/2 cup chopped onions
5. 1 or 2 cans cream of mushroom soup
6. 2 cups shredded cheese
7. salt, pepper, garlic
Everything gets mixed in a bowl, then placed in a baking pan and baked in the oven until the cheese that was sprinkled on top is melted or makes a nice crust.
