Gluten-Free Painted Table Short Ribs Over Creamy Polenta

Chef Jeromie Garza from the Painted Table visited the Great Day Kitchen to make Gluten-Free Cabernet and Port-wine Braised Short Ribs over our Creamy Gorgonzola Polenta.

 

Painted Table Short Ribs
 
Ingredients:

16-20LBS Beef Short Ribs
4 Cups Fennel Bulb Chopped
30 Cups Mirepoix
6-8 garlic cloves smashed
6 bay leaves
3/4 cup dry cranberries
3/4 cup prunes or raisins
1 liter port wine
1 bottle red wine
6 oz tomato paste
1 TBL Worcestershire
4 cups beef stock
1/4 cup beef paste
20 sprigs of thyme
2 sprigs rosemary
handful of parsley

Instructions:

Season beef with salt and pepper and cut strips into 1/3 or 1/4's
Sear beef in large rondeau on high heat adding olive oil as needed
Set seared beef in hotel pan
Add mirepoix and fennel to rondeau and saute until soft
Add garlic, bay leaves, cranberries and prunes
Add port wine and red wine to deglaze
Add tomato paste, Worcestershire, beef stock, and beef paste and bring to boil
Turn heat down to medium and simmer until reduced by half
In the last five minutes add thyme, rosemary and parsley
In deep hotel pans, strain out the contents of rondeau evenly
Place seared short ribs onto the veggies
Pour all the remaining liquid evenly over short ribs
Liquid should just about cover meat (if not add water to cover)
Cover pans with plastic wrap and foil to seal
Place in oven at 350 degrees for 2 hours
Remove short ribs from liquid and set on sheetpans
Strain liquid into container and refrigerate overnight
Remove fat from liquid and reduce by 3/4 to make sauce


Creamy Polenta

Ingredients:

15 Cups Liquid
1 TBL+1 1/2 TSP salt
3 3/4 cups Polenta
6 Oz butter
1/2 tsp nutmeg

For gorgonzola polenta add to taste.  Add heavy cream to thin to desired consistency.


Instructions:

Bring liquid, salt, and butter to a full rolling boil
Add polenta slowly while whisking, stirring constantly on medium heat until thickened
Add nutmeg, cheese, and cream to desired consistency
Polenta will set up thick if it sets, add more cream to loosen up.
